Quick Snacks

So far, nothing has been more time consuming than Chicken Satay. With this 3 hour meal in mind, I have to divert to the idea of something quick because let’s face it, there isn’t always time!

Salads

For me, a salad is like teatime to a Brit. It involves precise shapes and thicknesses of tomatoes, cucumbers, and olives that are in a separate bowl and sprinkled with sea salt; thoroughly washed baby spinach; followed by spices and homemade yogurt dressing. After the salt draws out the water and flavors of the vegetables, the spinach and dressing may be added. Then the entire combination must reach room temperature, if anything was previously refrigerated. To finalize the green goodness, freshly cooked, but never hot, tuna, chicken, or salmon strips are lain atop.

However! A salad can be a really quick meal and never requires meat or dairy 😉

Simple Salad

1 cup fresh baby spinach, washed and patted dry
1/2 cup cucumbers
1/2 cup tomatoes
1 cup arugula
1/4 cup whole olives of your choice (pitted or non, it’s okay)

Salad Dressing

2 tbsp full fat, whole milk, plain yogurt
1 tbsp olive oil
1/4 tsp ground sea salt
1/4 tsp pepper
1/4 tsp lemon or lime juice

Meat/Fish Eaters

Top off with: tuna, shrimp, salmon, steak or chicken strips.

Cheese Lovers

Add: Crumbled or fresh bleu cheese, chunks of Brie or Buffalo Mozzarella, Feta, or a puree of soft Goat cheese.

 

Apples and Peanut Butter

This snack is quick and full of protein!

Slice your favorite apples into 8-10 slices per each apple. Place ~1/2 to 1 cup of your favorite peanut butter next to the apples and enjoy!

 

Pretzel Bun Pizzas

“We want pizza, but it’s 10pm.”

We love ready-to-bake pretzels because 1. they’re cheaper than at the bakery and 2. we can have them fresh at anytime!

Find your favorite ready-to-bake pretzels (likely in the frozen food section) and grab your favorite pizza toppings.

Bake the pretzel buns as instructed on the package.
Once baked and semi-cooled, cut in half like you would a hot dog bun.
Coat each inside with: pizza sauce, garlic butter, or just olive oil.
Top with your favorite toppings: salami, pepperoni, olives, mushrooms, garlic, cheese! Put as much as you can on top.
Bake in the oven again at the same temperature you baked the pretzel buns, until the cheese is melted and bubbly.

Lazy-Sushi-Taster

I really love sushi. I can’t get enough of it. The only problem is finding all the ingredients at the right time!

My quick sushi taste fix is pretty simple, healthy, and delicious:

Cut one cucumber in half. Then cut each half lengthwise.
In a small dish, add a portion of Wasabi and mix with soy sauce.
BAM! Sushi taste with almost no ingredients 🙂
